Kids favorite Quick and Sweet Adai

Quick adai is a special treat that’ll win over kids and leave adults wanting more. It’s seriously addictive! It’s been one of my favorites since I was young and still is. This easy-to-make dish is a sweet, nutty pancake that’s perfect for breakfast, a snack, or even dessert.

Grandma’s Recipe – Quick Adai

This quick adai holds a special place in my heart. As a little girl, I spent my weekends and holidays at my grandmother’s house, and I’d often ask her for this quick adai, even though I didn’t know its proper name. I’d just mumble the ingredients, and she’d say, “Oh, that’s quick adai. Hang on, dear, I’ll make it for you!” In no time, there it would be on my plate, hot and fluffy. The taste still lingers on my tongue. While she can’t make it for me now like she used to, I’m grateful she passed the recipe down to me, so I can share it with my kids, who love it just as much as I did.

The name Quick Adai comes from how fast it can be cooked. I like to think it not only got its name from the speedy cooking method but also from how quickly it disappears from our plates! Just kidding, but it’s true. 😊

Quick Tips for Quick Adai

To get that perfect round shape for your adai, it’s best to pour the batter onto a pancake skillet. But hey, if that’s not an option, just grab a 1/2 cup of batter and pour it onto a tawa. Making a quick adai that way works just fine too!

Once you pour the batter, feel free to sprinkle your favorite chopped nuts on top, like cashews, pecans, walnuts, or almonds. Then, just flip it back so the nuts cook along with the adai.

Serve it hot with a cup of chai or coffee, and trust me, you’ll get hooked on this snack just like I did!

  1. Mix the Dry Ingredients

    In a bowl, combine 150g plain flour, 1/4 tsp baking powder, and 1/8 tsp salt. Sift and Set this mixture aside.

  2. Prepare the Egg Mixture:

    In another bowl, break 6 eggs and add 150g of sugar. Mix until the sugar dissolves completely, creating a smooth egg mixture.

  3. Combine Mixtures:

    Gradually mix the beaten eggs with the flour mixture. Stir continuously to ensure the batter is smooth and lump-free.
  4. Add Nuts and Spices:

    Stir in 30g of chopped cashew nuts. If you prefer, add a pinch of cardamom powder for an extra touch of aromatic flavor.

  5. Cook the Adai

    Heat a pancake skillet over medium heat and spread some oil, butter, or ghee evenly on the surface. Pour a ladleful of the pancake mixture onto the skillet and spread it out evenly to form a circle. Add some ghee on top for an extra rich flavor.
     
  6. Flip and Serve:

    Cook the Adai on low flame for about 3-4 minutes or until the edges start to lift. Flip it carefully and cook for another 3 minutes until both sides are golden brown.
