It uses fresh ingredients like ginger and garlic, along with aromatic spices like coriander, cumin, and fennel, plus some chili powder for that spicy touch. It’s usually served with rice, dosa, idlis, Appam, or parottas.

Tips for Cooking

When you’re cooking this dish, it gives off a great aroma, especially when you sauté the garlic with the skin on—that adds an extra special scent that’ll have anyone wandering into your kitchen. Personally, I like to make my Masala chicken semi-dry because I usually pair it with chicken curry and Ghee Rice. Since the Chicken Curry has a lot of gravy, I keep the Masala chicken less saucy. But if you’re serving this dish alone, feel free to add more water when the chicken starts to cook for a saucier consistency.

You can also use coconut milk instead of water to further enhance the flavor of the Masala chicken.

Due to the addition of ground almonds, the Masala chicken may thicken as it rests. You can add some hot water and reheat it before serving.

  1. In a mixer jar, grind the ginger, garlic, almonds, fennel seeds, peppercorns, and a little water into a smooth paste. Set aside.
  2. In a pan, sauté fennel seeds, curry leaves, dried chillies, and crushed garlic on low flame for 1 minute.
  3. Add sliced shallots and sauté on medium flame until light golden brown.
  4. Add the ground masala paste and sauté on low flame for 5 minutes.
  5. Add chicken pieces, mix on high flame for 5 minutes, and add salt.
  6. Add chilli powder, turmeric powder, and coriander powder. Sauté on low flame for 10 minutes.
  7. Pour in the water, stir, and cover the pan. Cook on low flame for 10 minutes, stirring occasionally.
  8. After 10 minutes, add lemon juice and give it a quick mix.
  9. Garnish with chopped coriander leaves and serve hot.
