Peas Pulao with cheese isn’t the usual one I make. This recipe comes with a fun twist! That’s right, it has a delicious cheese topping that makes it stand out from the typical version. I made this Peas Pulao using the dum process to bring out the flavors of the herbs and spices. Personally, I find that pulaos, biryanis, or any flavored basmati rice taste better when cooked this way. But if you’re short on time and want something quicker, you can use a rice cooker or pressure cooker with the same amount of water—just cook on low flame for one whistle. Alternatively, you can cook in a regular pot without the dum process. Just cover it tightly and cook for 15 minutes, then let it rest for another 15 minutes before fluffing up the rice. Remember to keep the water ratio the same, no matter which method you choose!

An ideal suggestion for this Peas Pulao would be a refreshing raita and a crispy pappadum—simplicity at its best!   1. In a pan, heat the oil and ghee. Add the bay leaves, cinnamon, and star anise, and roast on low flame for about 1 minute.
  2. Add the sliced onions and sauté on medium flame until golden brown. Add 2 tablespoons of ginger garlic paste and sauté on low flame for about 5 minutes. Then, add the slit green chillies.
  3. Add the basmati rice to the pan, give a gentle mix, and sauté for about 2 minutes. Add 3 cups of water and 1 1/2 teaspoons of salt (or to taste). Add the green peas and mix.
  4. Let the water start to boil. Once it starts boiling, cover the pan with a lid with a weight on top of the cover and cook on low flame for 15 minutes.

  5. After 15 minutes, switch off the flame and let the pan sit with the lid on for another 15 minutes.
  6. Open the cover, add 1 teaspoon of black pepper powder and the shredded cheese. Fluff up the rice gently. Serve hot with raita, fresh salads, or any side dish of your choice. Add more cheese on top before serving if desired.
