  1. Preparing the Black Chickpeas:

    Rinse and soak the black chickpeas for 7-8 hours.

    Cook the chickpeas in a pressure cooker with 2 cups of water and salt for 4 whistles. Drain and set aside.

  2. Making the Masala:

    Prepare the masala paste by mixing the chili powder, coriander powder, turmeric powder, Garam Masala, and black salt with a little water in a bowl. Set aside.

  3. Heat mustard oil in a pan over medium heat. Add cumin seeds and allow them to splutter.

    Add minced ginger and chopped green chili to the pan. Sauté for a few seconds until fragrant.

  4. Add the masala paste to the pan and sauté until the oil separates.

  5. Mixing the Chaat:

    Add the cooked black chickpeas to the pan with the masala. Cook for about 2 minutes, stirring well to combine.

    Transfer the mixture to a large bowl.

  6. Add the chopped onion, tomatoes, cucumber and mango to the bowl.

    Pour in a little lemon juice for tanginess.

  7. Sprinkle chaat masala and amchur powder, then add the chopped coriander and mint leaves. Mix everything thoroughly.
