A Festive Drink You Can Enjoy All Year Round

This drink, called thandai, is traditionally made for the Holi festival. But it doesn’t have to be limited to that! Thandai is full of healthy and delicious ingredients, making it perfect to enjoy any time of the year. My recipe includes a thandai powder that you can prepare in advance and store in the fridge. It makes about 6 servings, which is great for sharing or enjoying over a few days.

If you love it as much as I do, you can easily double the Thandai powder to make a bigger batch. This way, you’ll always have some ready to enjoy whenever you’re in the mood. Just remember to store the thandai powder in an airtight container, where it will stay fresh for up to two months.

My Youngest Tried and Loved Thandai

I was so surprised when my youngest child decided to try this drink for the first time! He had never tasted it before, so I didn’t think he would be interested. Usually, it’s just me, my husband, and the older kids who enjoy this drink. Since it’s made with spiced milk, I always thought he wouldn’t like the taste, so I never asked him to try it.

But this time was different. To everyone’s surprise, he decided to give it a go—and he loved it! He enjoyed the flavors so much that he drank it happily, almost like he was enjoying a bowl of kheer. It was so sweet to see him enjoy something that the rest of us already love. I was so happy to make this special little treat for everyone to enjoy together! And yes, the kids will absolutely love this drink.

Adapting Thandai Recipe: Poppy Seeds to Cashews

Although this is a simple and quick drink to make, there are a few important points worth noting. First and foremost, this traditional recipe always includes poppy seeds (khus khus) as an essential ingredient. However, in the region where I live, poppy seeds are not readily available. To adapt, I substitute them with additional cashew nuts. Not only for this drink, but I often use cashews as a replacement for poppy seeds in other recipes as well, and the results are fantastic. Cashews make an excellent alternative and bring their own rich, creamy flavor.

When I was new to cooking, I would often skip recipes that called for ingredients I couldn’t find. Over time, with plenty of trial and error, I realized that cooking is all about customization—adapting recipes to suit your dietary needs, preferences, and the ingredients you have on hand. That’s the beauty of this thandai recipe: it’s incredibly versatile. You can tweak it to fit what’s available in your kitchen and still create something delicious.

Grinding Tips & Straining Options

When grinding the cooled nuts and spices, avoid running the mixer continuously, as this can cause the nuts to release their oil, leading to a clumpy texture. Instead, use short pulses, pausing between each, and repeat until you achieve the desired consistency.

Once the drink is prepared, you can choose to strain it using a fine mesh sieve, or skip this step if you prefer. Personally, I enjoy the subtle crunch of nut bits in the drink, but if that’s not to your liking, feel free to strain them out. Rest assured, most of the nuts and spices will already be finely ground and incorporated into the drink.

Easy Tips for Making Perfect Thandai

  • Adjust the Sweetness: If you like your Thandai to be sweeter, simply add extra rock sugar or honey while warming the milk. Taste it as you go to get it just right!
  • Try Extra Flavors: Want to make your Thandai even better? Add a tiny pinch of fennel powder or a small splash of rose water for a unique, delicious twist.
  • Store for Later: You can make Thandai ahead of time! Keep it in the fridge for up to 2 days. It’s perfect if you’re preparing for a party or just want to enjoy it later.

Easy Substitutes for Thandai Ingredients

You can still make a tasty thandai even if you don’t have all the traditional ingredients. Here are some simple swaps you can try:

  • Milk Alternatives: Don’t have regular milk or can’t drink it? No problem! You can use almond milk, soy milk, or oat milk instead. These are great options for anyone who is lactose-intolerant or wants a vegan version.
  • Nuts Replacement: If you’re out of almonds or cashews, try walnuts or hazelnuts. They give a slightly different but delicious flavor to your thandai.
  • Rock Sugar Substitute: If you don’t have rock sugar, you can use white sugar, brown sugar, or even jaggery to make the drink sweet. You can adjust the sweetness to your liking.
  • Spices Adjustments: Missing saffron or cardamom? Don’t worry! A small pinch of cinnamon or nutmeg will add a warm and lovely aroma to thandai recipe.
  • Poppy Seeds Alternative: If you don’t have poppy seeds, you can use cashews or almonds instead for your thandai powder. They’ll give a similar rich and nutty texture to your drink.

These simple substitutes will help you make thandai without any stress!

Easy Ways to Serve Thandai

Thandai is a refreshing drink that can be enjoyed in different ways, depending on what you like or the occasion. Here are some simple tips to serve it:

  • Chill the Thandai and pour it over ice cubes in tall glasses to make it extra cool and refreshing.
  • For a richer and creamier taste, add a spoonful of whipped cream or a scoop of vanilla ice cream on top. It makes the drink feel extra special.
  • Decorate the Thandai with some chopped nuts like almonds or pistachios, dried rose petals, or a few saffron strands. This not only makes it look pretty but also adds extra flavor.

Enjoy your Thandai however you like it!

Step-by-Step Instructions on how to make Thandai

  1. Take a pan and add almonds, cashews, pistachios, melon seeds, cinnamon, cardamom, black pepper, and rose petals.
  2. Place the pan on low heat and gently toast the ingredients for 1–2 minutes. Stir occasionally to ensure they toast evenly. You’ll know they’re ready when you can smell their fragrant aroma.
  3. Once toasted, remove the pan from the heat and let the ingredients cool completely. This step is important to prevent the mixture from becoming sticky when grinding.
  4. Allow the ingredients to cool completely before grinding. Once cooled, transfer them to a grinder and use the pulse setting to achieve a coarse texture. Avoid continuous grinding, as it may result in a lumpy mixture. Instead, pulse the grinder for a few seconds at a time, pausing in between. Repeat this process until you reach the desired texture.thandai-instructions-curry-loves

  5. Take 500 ml of milk and pour it into a separate pan. Place the pan on the stove over medium heat.
  6. Add a few strands of saffron to the milk. This will give the milk a lovely golden color and a gentle, unique flavor.
  7. Watch the milk carefully. When you start to see small bubbles on the surface, it’s time to add the rock sugar. Stir the milk well until the sugar has completely dissolved.thandai-instructions-curry-loves
  8. Reduce the flame to low and add 3 tablespoons of the thandai mix into the milk. Stir it thoroughly so the mix blends well with the milk.
  9. Let the milk simmer gently over low heat. Keep watching as it heats slowly and starts to boil slightly. This step helps the flavors mix into the milk.
  10. Add in few drops of rose water, if you would like to.

  11. Turn off the heat once it’s done. If you want the drink to be very smooth, you can strain the milk through a fine sieve to remove any small bits of the mix. This step is optional, so you can skip it if you like.thandai-instructions-curry-loves

  12. Let the thandai cool down on its own at room temperature. Do not put it in the fridge while it is still warm.
  13. After it has cooled completely, place it in the fridge for at least 2–3 hours. This will make it cold and ready to enjoy.
  14. Take chilled thandai and carefully pour it into serving glasses.
  15. Add some crushed pistachios and rose petals on top for a nice crunch and flavor.
  16. Sprinkle a few saffron strands for color and additional flavor.
  17. Serve the thandai chilled and enjoy this refreshing and delicious drink! You can also store any leftover thandai in the fridge for later.thandai-instructions-curry-loves

Different Ways to Make Thandai

The traditional thandai is always a favorite, but you can try different versions to create new flavors or suit different tastes. Here are some easy ideas to try:

  • Fruity Thandai: Add fresh fruits like mango, strawberry, or pineapple to your thandai recipe. Blend them in to give it a sweet and refreshing fruity flavor.
  • Pistachio Thandai: Swap out the almonds with pistachios. This will make your thandai creamier and give it a rich, nutty taste.
  • Coffee Thandai: Mix in a shot of espresso or a spoon of instant coffee powder. It will give your thandai a delicious coffee flavor and a little energy boost!

Is it okay to add the ingredients without soaking, as the traditional recipe requires soaking?

Soaking is a traditional step in preparing thandai, where ingredients are soaked in milk or water before being blended into the drink. However, this step isn’t essential. You can skip soaking by grinding the ingredients into a fine powder, which can be stored for future use. Alternatively, you can prepare a thandai syrup, a convenient option that allows you to whip up the drink instantly. Both the powder and syrup offer hassle-free ways to enjoy the rich, authentic flavors of thandai anytime, without the extra effort of soaking for hours.

What type of milk works best for thandai?

Traditionally, whole milk is used to give thandai its rich and creamy texture. However, you can use plant-based milk like almond or oat milk as a dairy-free alternative.

What other sweet alternatives can I use instead of rock sugar?

There are plenty of sweet alternatives you can try! Popular options include honey, jaggery, or coconut sugar, which add a natural and unique flavor to your thandai. Maple syrup or stevia are also great choices if you’re looking for healthier or low-calorie substitutes. Adjust the quantity based on your preferred level of sweetness.

Is thandai safe for children?

Thandai is generally safe for children, but consider omitting or reducing certain spices, such as black pepper, to make it kid-friendly.

Can I make thandai without nuts for allergies?

Certainly! You can prepare nut-free thandai by skipping almonds, cashews, or other nuts in the recipe. Substitute with seeds like sunflower or melon seeds for a similar creamy profile. Chia seeds and basil seeds are also excellent alternatives.
