Just last week, I attended a friend’s daughter’s birthday party. It was a simple gathering with a few friends and relatives, but the variety of food was vast. One of the starters that caught my eye was the corn fritters. To be honest, I had never eaten them as fritters before, but their golden, crispy appeal was so tempting.

I had a few of the corn fritters, and they were too good. So I asked my friend where she had ordered them, and with a big grin on her face, she said she made them, which pleasantly surprised me. When I asked her how, she told me the recipe in under 3 minutes! Yes, that’s how quick and easy this recipe can be made as your next tea time snack.

Cooking Tips for Perfect Corn Fritters

I used an ice cream scoop to scoop out the corn fritters, as this mixture is quite loose. However, there’s no need to worry—once placed into the hot oil, they will still be able to hold their shape beautifully while frying. The ice cream scoop ensures that each fritter is of uniform size, which helps them cook evenly and attain that perfect golden brown color.

The corn kernels combined with plain flour naturally enhance the fritters’ crunchiness. However, if you’re craving an extra crunch, you can easily amp it up by adding some finely chopped celery to the mixture. Simply chop the celery into small pieces and incorporate them into your batter. Mix everything well, and then proceed to fry the corn fritters as usual for a delightful, crunchy treat.

  1. Combine the Vegetables

    Start by adding 4 cups of corn kernels to a large bowl. Toss in the chopped scallions, coriander leaves, and sliced shallots. Season with 1/2 tsp of salt and 1/2 tsp of black pepper powder. Give everything a good mix to ensure even distribution.

  2. Add the Flour

    Next, sift in 1/2 cup of plain flour. Mix again until the flour is thoroughly combined with the vegetables.

  3. Whisk the Eggs
